- 4 Italian sausage links (mild or spicy, your choice)
- 2 tablespoons olive oil
- 1 medium onion, sliced
- 2 bell peppers (red, yellow, or green), sliced
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 4 hoagie rolls or crusty bread
- Grated Parmesan cheese (optional)
- Fresh basil for garnish (optional)
Instructions
- In a large skillet over medium heat, add the olive oil and heat until shimmering.
- Add the Italian sausage links to the skillet and brown on all sides, about 5-7 minutes.
- Once browned, remove the sausages from the skillet and set aside.
- In the same skillet, add the sliced onions and bell peppers. Cook until softened, about 5 minutes.
- Add the minced garlic and dried oregano, cooking for an additional minute until fragrant.
- Return the sausages to the skillet and cook until they are fully cooked through, about 10 more minutes.
- Season with salt and pepper to taste.
- Toast the hoagie rolls if desired, then fill each roll with the sausage and pepper mixture.
- Top with grated Parmesan cheese and fresh basil if using. Serve immediately.

- You can substitute turkey or chicken sausage for a lighter option.
