  • 3/4 cup honey (preferably local)
  • 1 cup heavy cream
  • 3 large eggs
  • 1/2 teaspoon salt (plus more for garnish)
  • 1 teaspoon vanilla extract
  • 1 tablespoon fresh lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Place the pie crust in a 9-inch pie pan and crimp the edges. Prick the bottom with a fork to prevent bubbling.
  3. In a mixing bowl, whisk together honey, heavy cream, eggs, salt, vanilla extract, and lemon juice until well combined.
  4. Pour the honey mixture into the prepared pie crust.
  5. Bake in the preheated oven for 30-35 minutes, or until the filling is set and slightly golden.
  6. Remove from the oven and let cool to room temperature.
  7. Chill the pie in the refrigerator for at least 2 hours before serving.
  8. Before serving, sprinkle a pinch of salt on top for garnish.
