- 3/4 cup honey (preferably local)
- 1 cup heavy cream
- 3 large eggs
- 1/2 teaspoon salt (plus more for garnish)
- 1 teaspoon vanilla extract
- 1 tablespoon fresh lemon juice
Instructions
- Preheat your oven to 350°F (175°C).
- Place the pie crust in a 9-inch pie pan and crimp the edges. Prick the bottom with a fork to prevent bubbling.
- In a mixing bowl, whisk together honey, heavy cream, eggs, salt, vanilla extract, and lemon juice until well combined.
- Pour the honey mixture into the prepared pie crust.
- Bake in the preheated oven for 30-35 minutes, or until the filling is set and slightly golden.
- Remove from the oven and let cool to room temperature.
- Chill the pie in the refrigerator for at least 2 hours before serving.
- Before serving, sprinkle a pinch of salt on top for garnish.
