Instructions
- Shred the rotisserie chicken and set aside.
- In a large skillet, heat the olive oil over medium heat.
- Add the chopped onion and bell pepper. Sauté until softened, about 5 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the shredded chicken to the skillet, along with salt, pepper, cumin, and chili powder. Mix well to combine.
- Cook until the chicken is heated through, about 5-7 minutes.
- Serve the chicken mixture in tortillas or on bread, topped with cheddar cheese, sour cream, and sliced avocado.
