Ingredients

  • 12 ounces pasta (spaghetti or your choice)
  • 2 cups cherry tomatoes, halved
  • 3 tablespoons olive oil
  • Salt and pepper, to taste
  • 4 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • 8 ounces burrata cheese
  • Fresh basil, for garnish
  • Grated Parmesan cheese, for serving

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. On a baking sheet, combine the cherry tomatoes, 2 tablespoons of olive oil, salt, and pepper. Toss to coat and spread evenly.
  3. Roast in the preheated oven for 20-25 minutes, until tomatoes are blistered and caramelized.
  4. Meanwhile, cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.
  5. In a large skillet over medium heat, add the remaining tablespoon of olive oil. Add the minced garlic and red pepper flakes, sauté for about 1 minute until fragrant.
  6. Add the roasted tomatoes to the skillet, along with the cooked pasta. Toss to combine, adding reserved pasta water as needed to create a sauce.
  7. Remove from heat and gently fold in the burrata cheese, allowing it to melt slightly.
  8. Serve immediately, garnished with fresh basil and grated Parmesan cheese.

Notes

  • Feel free to add protein like grilled chicken or shrimp for a heartier meal.
  • Use any pasta shape you prefer; penne or fusilli work well too.
