- 12 ounces pasta (spaghetti or your choice)
- 2 cups cherry tomatoes, halved
- 3 tablespoons olive oil
- Salt and pepper, to taste
- 4 cloves garlic, minced
- 1/4 teaspoon red pepper flakes (optional)
- 8 ounces burrata cheese
- Fresh basil, for garnish
- Grated Parmesan cheese, for serving
Instructions
- Preheat the oven to 400°F (200°C).
- On a baking sheet, combine the cherry tomatoes, 2 tablespoons of olive oil, salt, and pepper. Toss to coat and spread evenly.
- Roast in the preheated oven for 20-25 minutes, until tomatoes are blistered and caramelized.
- Meanwhile, cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.
- In a large skillet over medium heat, add the remaining tablespoon of olive oil. Add the minced garlic and red pepper flakes, sauté for about 1 minute until fragrant.
- Add the roasted tomatoes to the skillet, along with the cooked pasta. Toss to combine, adding reserved pasta water as needed to create a sauce.
- Remove from heat and gently fold in the burrata cheese, allowing it to melt slightly.
- Serve immediately, garnished with fresh basil and grated Parmesan cheese.

- Feel free to add protein like grilled chicken or shrimp for a heartier meal.
- Use any pasta shape you prefer; penne or fusilli work well too.
