Ingredients

  • 1 sheet puff pastry
  • 2 red onions
  • 2 tablespoons olive oil
  • 4 ounces goat cheese
  • 1 tablespoon fresh thyme
  • to taste salt
  • to taste black pepper
  • 1 egg

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Roll out the puff pastry on a lightly floured surface and transfer it to a tart pan.
  3. Prick the bottom of the pastry with a fork to prevent it from puffing up.
  4. In a bowl, toss the sliced red onions with olive oil, salt, and black pepper.
  5. Spread the onions evenly over the pastry.
  6. Sprinkle the crumbled goat cheese and fresh thyme over the onions.
  7. Brush the edges of the pastry with the beaten egg.
  8. Bake in the preheated oven for 25-30 minutes or until the pastry is golden brown and the onions are caramelized.
  9. Allow to cool slightly before slicing and serving.
