Instructions
- Preheat the oven to 400°F (200°C).
- Roll out the puff pastry on a lightly floured surface and transfer it to a tart pan.
- Prick the bottom of the pastry with a fork to prevent it from puffing up.
- In a bowl, toss the sliced red onions with olive oil, salt, and black pepper.
- Spread the onions evenly over the pastry.
- Sprinkle the crumbled goat cheese and fresh thyme over the onions.
- Brush the edges of the pastry with the beaten egg.
- Bake in the preheated oven for 25-30 minutes or until the pastry is golden brown and the onions are caramelized.
- Allow to cool slightly before slicing and serving.
