This Roasted Grape and Brie Flatbread is a delightful combination of sweet roasted grapes, creamy brie cheese, and a crispy flatbread base, perfect for appetizers or a light meal.

- 1 flatbread or naan
- 1 cup grapes, washed and dried
- 8 ounces brie cheese, sliced
- 2 tablespoons olive oil
- 1 tablespoon honey
- Salt and pepper, to taste
- Fresh rosemary or thyme, for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- On a baking sheet, spread the grapes in a single layer. Drizzle with 1 tablespoon of olive oil, and sprinkle with salt and pepper.
- Roast the grapes in the oven for about 15-20 minutes, or until they are soft and slightly caramelized.
- While the grapes are roasting, prepare the flatbread. Place the flatbread on a separate baking sheet.
- Layer the sliced brie cheese evenly over the flatbread.
- Once the grapes are done roasting, remove them from the oven and scatter them over the brie cheese.
- Drizzle the remaining tablespoon of olive oil and honey over the flatbread.
- Return the flatbread to the oven and bake for an additional 10-12 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let cool slightly before slicing.
- Garnish with fresh rosemary or thyme if desired, and serve warm.
