- 1 pizza dough, store-bought or homemade
- 1 head of garlic
- 2 tablespoons olive oil, divided
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- 2 cups fresh arugula
- 1 tablespoon lemon juice
Instructions
- Preheat the oven to 475°F (245°C).
- Cut the top off the head of garlic, drizzle with 1 tablespoon of olive oil, wrap in foil, and roast in the oven for 30-35 minutes until soft.
- While the garlic is roasting, roll out the pizza dough on a floured surface to your desired thickness.
- Place the rolled dough on a pizza stone or baking sheet lined with parchment paper.
- In a bowl, mix the ricotta cheese with salt and pepper to taste.
- Spread the ricotta mixture evenly over the pizza dough.
- Once the garlic is roasted, squeeze the cloves into a small bowl, mash with a fork, and spread evenly over the ricotta.
- Top with mozzarella and Parmesan cheese.
- Bake in the oven for 12-15 minutes, or until the crust is golden and the cheese is bubbly.
- While the pizza bakes, toss the arugula with the remaining tablespoon of olive oil and lemon juice.
- Once the pizza is done, remove it from the oven and top with the arugula mixture.
- Slice and serve warm.
Notes
- For a spicier kick, add red pepper flakes on top before serving.
