Description

Ingredients

- 3–4 lbs beef roast
- 2 tablespoons olive oil
- Salt to taste
- Pepper to taste
- 4 large carrots, chopped
- 3 potatoes, cubed
- 2 onions, quartered
- 2 cups beef broth
- Herbs (rosemary, thyme) to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Season the roast with salt and pepper.
- Heat olive oil in a skillet over medium-high heat.
- Sear the roast on all sides until browned.
- Place the roast in a roasting pan.
- Add carrots, potatoes, onions, and herbs around the roast.
- Pour beef broth into the pan.
- Cover the pan with foil.
- Roast in the oven for about 2-3 hours or until the internal temperature reaches desired doneness.
- Let the roast rest for 15 minutes before slicing.
Notes
- Adjust cooking time based on roast size.
- Use a meat thermometer for accuracy.
- Serve with gravy made from the pan drippings.
