A classic Reuben sandwich made with layers of corned beef, Swiss cheese, sauerkraut, and Russian dressing, all grilled between slices of rye bread.


Ingredients

  • 8 slices rye bread
  • 8 ounces corned beef, sliced
  • 8 ounces Swiss cheese, sliced
  • 1 cup sauerkraut, drained
  • 1/2 cup Russian dressing
  • 4 tablespoons unsalted butter, softened

Instructions

  1. Preheat a skillet or griddle over medium heat.
  2. Spread 1 tablespoon of softened butter on one side of each slice of rye bread.
  3. On the unbuttered side of 4 slices, layer slices of corned beef, Swiss cheese, and sauerkraut.
  4. Drizzle Russian dressing over the sauerkraut, then top with the remaining slices of bread, buttered side up.
  5. Place the sandwiches on the skillet and cook until the bread is golden brown and the cheese is melted, about 4-5 minutes per side.
  6. Remove from the skillet, slice in half, and serve warm.

Notes

  • For added flavor, you can use marble rye bread.
  • Make sure to drain the sauerkraut well to avoid a soggy sandwich.
  • Feel free to customize the dressing; Thousand Island dressing can also be used.
