A deliciously patriotic cheesecake featuring layers of red strawberries, creamy white cheesecake, and blue blueberries, perfect for celebrating holidays like the Fourth of July.

- 1 1/2 cups Graham cracker crumbs
- 1/2 cup Unsalted butter
- 2 (8 oz) packages Cream cheese
- 1 cup Granulated sugar
- 1 teaspoon Vanilla extract
- 1/2 cup Sour cream
- 3 Eggs
- 1 cup Strawberries
- 1 cup Blueberries
- for topping Whipped cream
- for garnish Fresh mint leaves
Instructions
- Preheat your oven to 325°F (160°C).
- In a medium bowl, combine the graham cracker crumbs and melted butter. Mix until well combined.
- Press the crumb mixture into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove and let cool.
- In a large mixing bowl, beat the softened cream cheese with granulated sugar until smooth and creamy.
- Add vanilla extract and sour cream to the cream cheese mixture, mixing until well combined.
- Add the eggs one at a time, mixing just until incorporated after each addition.
- Pour half of the cheesecake batter over the cooled crust. Spread evenly.
- Layer the sliced strawberries evenly over the batter.
- Pour the remaining cheesecake batter on top of the strawberries, smoothing the top.
- Bake in the preheated oven for 50-60 minutes, or until the center is set and slightly jiggly.
- Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour.
- Remove from the oven and refrigerate for at least 4 hours or overnight.
- Before serving, top with blueberries and whipped cream. Garnish with fresh mint leaves if desired.
