A festive and delicious cake perfect for celebrations like the 4th of July, Memorial Day, or any patriotic event. This cake features layers of red, white, and blue cake with a creamy frosting.

- 2 1/2 cups all-purpose flour
- 2 1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup unsalted butter, softened
- 2 cups granulated sugar
- 4 large eggs
- 1 tsp vanilla extract
- 1 cup milk
- Red food coloring
- Blue food coloring
- 3 cups heavy whipping cream
- 1/2 cup powdered sugar
- 1 tsp vanilla extract (for frosting)
- Fresh berries for decoration (strawberries and blueberries)
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
- In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
- In a large bowl, cream together the butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Mix in vanilla.
- Gradually add the flour mixture alternately with the milk, starting and ending with the flour mixture. Mix until just combined.
- Divide the batter into three bowls. Tint one bowl red with food coloring, one bowl blue, and leave the third bowl plain (white).
- Pour the red batter into one prepared cake pan, the white batter into the second, and the blue batter into the third.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Allow the cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
- In a large bowl, whip the heavy cream with powdered sugar and vanilla until stiff peaks form.
- Once the cakes are completely cool, layer them starting with the red layer, then the white, and finally the blue layer. Spread whipped cream frosting between each layer and on the top and sides of the cake.
- Decorate with fresh strawberries and blueberries on top. Chill before serving.
Notes
- Ensure all ingredients are at room temperature for best results.
- You can use store-bought frosting if you’re short on time.
- For extra flavor, consider adding a layer of jam or fruit between the cake layers.
