Scale
- 1 cup fresh raspberries
- 2 cups mascarpone cheese
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 tablespoon rose water
- 1 cup strong brewed coffee, cooled
- 24 ladyfinger cookies
- Fresh mint leaves for garnish
Instructions
- In a mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
- In another bowl, combine mascarpone cheese and rose water until smooth.
- Gently fold the whipped cream into the mascarpone mixture until well combined.
- Dip each ladyfinger into the cooled coffee for a couple of seconds to soak them slightly.
- In a serving dish, layer half of the soaked ladyfingers at the bottom.
- Spread half of the mascarpone mixture over the ladyfingers, then add half of the raspberries on top.
- Repeat the layers with the remaining ladyfingers, mascarpone mixture, and raspberries.
- Cover and refrigerate for at least 4 hours, preferably overnight.

Notes
- For a more intense raspberry flavor, you can blend some of the raspberries into a puree and layer it between the mascarpone.
