A simple and delicious stir fry recipe that comes together in just 30 minutes, perfect for busy weeknights!

- 1 lb chicken breast, sliced into thin strips
- 2 cups mixed vegetables (bell peppers, broccoli, carrots, snap peas)
- 3 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon cornstarch
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- Salt and pepper to taste
- Cooked rice or noodles for serving
Instructions
- In a bowl, mix the sliced chicken with soy sauce, oyster sauce, cornstarch, salt, and pepper. Set aside for 10 minutes to marinate.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir-fry until cooked through, about 5-7 minutes. Remove the chicken from the pan and set aside.
- In the same pan, add the remaining tablespoon of oil. Add the minced garlic and ginger, stir-frying for about 30 seconds until fragrant.
- Add the mixed vegetables to the pan and stir-fry for 3-4 minutes until they are tender-crisp.
- Return the cooked chicken to the pan and toss everything together. Cook for an additional 1-2 minutes to heat through.
- Serve the stir fry over cooked rice or noodles.
