- 1 lb ground beef or turkey
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 can (15 oz) kidney beans, rinsed and drained
- 1 cup corn (frozen or canned)
- 1 tablespoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 cup shredded cheese (cheddar or your choice)
- Fresh cilantro for garnish (optional)
Instructions
- In a large pot, brown the ground beef or turkey over medium heat. Drain excess fat if necessary.
- Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent, about 5 minutes.
- Stir in the diced tomatoes, kidney beans, corn, chili powder, cumin, salt, and pepper.
- Bring the mixture to a simmer and let it cook for about 15 minutes, stirring occasionally.
- Serve hot, topped with shredded cheese and fresh cilantro if desired.
Notes
- Feel free to add other vegetables like bell peppers or zucchini.
- This recipe can be made ahead of time and stored in the fridge for up to 3 days.
- For a vegetarian version, substitute meat with additional beans or lentils.
