Instructions
- Cook quinoa according to package instructions.
- In a large bowl, combine spinach, cherry tomatoes, and cucumbers.
- Add cooked quinoa to the bowl.
- Sprinkle feta cheese over the top.
- Drizzle with olive oil and lemon juice.
- Season with salt and pepper.
- Toss gently to combine.
