Quick and easy meals prepared in an instant pot.


Ingredients

  • 1 pound chicken breast
  • 1 cup rice
  • 2 cups chicken broth
  • 1 cup mixed vegetables
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Turn on the instant pot and select the sauté function.
  2. Add olive oil and sauté the chicken until browned.
  3. Add rice, chicken broth, mixed vegetables, garlic powder, onion powder, salt, and pepper.
  4. Close the lid and set the pot to cook on high pressure for 10 minutes.
  5. Once done, allow the pot to naturally release pressure for 5 minutes, then quick release the remaining pressure.
  6. Fluff the rice and serve hot.
