- 1 pound chicken breast
- 1 cup rice
- 2 cups chicken broth
- 1 cup mixed vegetables
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Turn on the instant pot and select the sauté function.
- Add olive oil and sauté the chicken until browned.
- Add rice, chicken broth, mixed vegetables, garlic powder, onion powder, salt, and pepper.
- Close the lid and set the pot to cook on high pressure for 10 minutes.
- Once done, allow the pot to naturally release pressure for 5 minutes, then quick release the remaining pressure.
- Fluff the rice and serve hot.

- This recipe can be customized with your favorite vegetables.
- Adjust seasoning to your taste.
- Store leftovers in an airtight container in the fridge.
