Instructions
- Preheat the oven to 350°F (175°C).
- Cook the elbow macaroni according to package instructions until al dente, then drain and set aside.
- In a large saucepan, melt the butter over medium heat.
- Whisk in the flour and cook for about 1 minute to create a roux.
- Gradually add the milk, whisking continuously until the mixture thickens.
- Stir in the pumpkin puree, nutmeg, smoked paprika, salt, and pepper.
- Remove the saucepan from heat and mix in the shredded cheddar and Gruyère cheeses until melted and smooth.
- Combine the cooked macaroni with the cheese sauce, stirring until well coated.
- Transfer the mac and cheese mixture to a greased baking dish.
- Sprinkle breadcrumbs evenly over the top.
- Bake in the preheated oven for 20 minutes or until the top is golden brown.
- Let it cool for a few minutes before serving.
