This pulled BBQ chicken is tender, juicy, and packed with flavor. Perfect for sandwiches, tacos, or served on its own!

- 2 lbs boneless, skinless chicken breasts
- 1 cup BBQ sauce (store-bought or homemade)
- 1/2 cup chicken broth
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Buns for serving (optional)
- Coleslaw for topping (optional)
Instructions
- In a large skillet, heat olive oil over medium heat. Season chicken breasts with garlic powder, onion powder, smoked paprika, salt, and pepper.
- Add the seasoned chicken to the skillet, and sear for 3-4 minutes on each side until golden brown.
- Pour in the chicken broth and cover the skillet. Reduce heat to low and let it simmer for 20-25 minutes until the chicken is cooked through and tender.
- Remove the chicken from the skillet and shred it using two forks.
- Return the shredded chicken to the skillet and add the BBQ sauce. Stir to coat the chicken evenly.
- Cook for an additional 5-10 minutes until the chicken is heated through.
- Serve on buns topped with coleslaw, if desired.
Notes
- For extra flavor, marinate the chicken in BBQ sauce for a few hours before cooking.
- You can also use a slow cooker for this recipe. Cook on low for 6-7 hours or high for 3-4 hours.
