Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 cup BBQ sauce (store-bought or homemade)
  • 1/2 cup chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Buns for serving (optional)
  • Coleslaw for topping (optional)

Instructions

  1. In a large skillet, heat olive oil over medium heat. Season chicken breasts with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Add the seasoned chicken to the skillet, and sear for 3-4 minutes on each side until golden brown.
  3. Pour in the chicken broth and cover the skillet. Reduce heat to low and let it simmer for 20-25 minutes until the chicken is cooked through and tender.
  4. Remove the chicken from the skillet and shred it using two forks.
  5. Return the shredded chicken to the skillet and add the BBQ sauce. Stir to coat the chicken evenly.
  6. Cook for an additional 5-10 minutes until the chicken is heated through.
  7. Serve on buns topped with coleslaw, if desired.

Notes

  • For extra flavor, marinate the chicken in BBQ sauce for a few hours before cooking.
  • You can also use a slow cooker for this recipe. Cook on low for 6-7 hours or high for 3-4 hours.
