Ingredients

  • 4 medium russet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked and crumbled bacon
  • 1/4 cup sour cream
  • 2 green onions, sliced

Instructions

  1. Preheat your air fryer to 400°F (200°C).
  2. Wash and scrub the potatoes thoroughly. Pat them dry with a towel.
  3. Using a fork, poke several holes in each potato to allow steam to escape.
  4. Rub the potatoes with olive oil, salt, and black pepper.
  5. Place the potatoes in the air fryer basket and cook for 25-30 minutes, or until tender.
  6. Once cooked, remove the potatoes from the air fryer and let them cool for a few minutes.
  7. Cut the potatoes in half lengthwise and scoop out some of the flesh, leaving about 1/4 inch of potato on the skin.
  8. Return the potato skins to the air fryer basket, cut side up.
  9. Sprinkle cheddar cheese and crumbled bacon into each skin.
  10. Air fry for an additional 5-7 minutes, or until the cheese is melted and bubbly.
  11. Remove from the air fryer and top with sour cream and sliced green onions before serving.

Notes

  • Feel free to customize your toppings, such as adding jalapeños or different types of cheese.
  • Store any leftover potato skins in an airtight container in the refrigerator for up to 3 days.
