Description
Crispy and delicious air fryer potato skins filled with cheese and bacon, perfect as a snack or appetizer.
Ingredients

- 4 medium russet potatoes
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded cheddar cheese
- 1/2 cup cooked and crumbled bacon
- 1/4 cup sour cream
- 2 green onions, sliced
Instructions
- Preheat your air fryer to 400°F (200°C).
- Wash and scrub the potatoes thoroughly. Pat them dry with a towel.
- Using a fork, poke several holes in each potato to allow steam to escape.
- Rub the potatoes with olive oil, salt, and black pepper.
- Place the potatoes in the air fryer basket and cook for 25-30 minutes, or until tender.
- Once cooked, remove the potatoes from the air fryer and let them cool for a few minutes.
- Cut the potatoes in half lengthwise and scoop out some of the flesh, leaving about 1/4 inch of potato on the skin.
- Return the potato skins to the air fryer basket, cut side up.
- Sprinkle cheddar cheese and crumbled bacon into each skin.
- Air fry for an additional 5-7 minutes, or until the cheese is melted and bubbly.
- Remove from the air fryer and top with sour cream and sliced green onions before serving.
Notes
- Feel free to customize your toppings, such as adding jalapeños or different types of cheese.
- Store any leftover potato skins in an airtight container in the refrigerator for up to 3 days.
