A creamy and flavorful potato salad that’s perfect for picnics, barbecues, or any gathering.
Ingredients

- 2 pounds of potatoes (Yukon Gold or red potatoes recommended)
- 1 cup mayonnaise
- 2 tablespoons Dijon mustard
- 1 tablespoon apple cider vinegar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup chopped celery
- 1/2 cup chopped red onion
- 3 hard-boiled eggs, chopped
- 2 tablespoons fresh dill or parsley, chopped (optional)
Instructions
- Boil the potatoes in a large pot of salted water until fork-tender, about 15-20 minutes. Drain and let cool.
- Once cooled, peel the potatoes if desired and cut them into bite-sized pieces.
- In a large bowl, combine the mayonnaise, Dijon mustard, apple cider vinegar, salt, and black pepper. Mix well.
- Add the potatoes, celery, red onion, and hard-boiled eggs to the dressing. Gently fold until everything is coated.
- Taste and adjust seasoning if necessary. Stir in fresh dill or parsley if using.
- Cover and refrigerate for at least 1 hour before serving to allow flavors to meld.
Notes
- For a lighter version, substitute Greek yogurt for half of the mayonnaise.
- Feel free to add other ingredients such as pickles, bell peppers, or bacon for added flavor.
