Ingredients

  • 2 pounds of potatoes (Yukon Gold or red potatoes recommended)
  • 1 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup chopped celery
  • 1/2 cup chopped red onion
  • 3 hard-boiled eggs, chopped
  • 2 tablespoons fresh dill or parsley, chopped (optional)

Instructions

  1. Boil the potatoes in a large pot of salted water until fork-tender, about 15-20 minutes. Drain and let cool.
  2. Once cooled, peel the potatoes if desired and cut them into bite-sized pieces.
  3. In a large bowl, combine the mayonnaise, Dijon mustard, apple cider vinegar, salt, and black pepper. Mix well.
  4. Add the potatoes, celery, red onion, and hard-boiled eggs to the dressing. Gently fold until everything is coated.
  5. Taste and adjust seasoning if necessary. Stir in fresh dill or parsley if using.
  6. Cover and refrigerate for at least 1 hour before serving to allow flavors to meld.

Notes

  • For a lighter version, substitute Greek yogurt for half of the mayonnaise.
  • Feel free to add other ingredients such as pickles, bell peppers, or bacon for added flavor.
