Description

Tender chicken thighs glazed with sweet and tangy pomegranate molasses, creating a deliciously sticky and flavorful dish.


Ingredients

  • 4 chicken thighs, bone-in and skin-on
  • 1/4 cup pomegranate molasses
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • Fresh pomegranate seeds for garnish
  • Fresh parsley, chopped for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, combine pomegranate molasses, olive oil, minced garlic, salt, black pepper, cumin, smoked paprika, and cayenne pepper. Mix well.
  3. Add the chicken thighs to the bowl and toss to coat them evenly with the marinade. Let them marinate for at least 30 minutes, or preferably overnight in the refrigerator.
  4. Heat a large oven-safe skillet over medium-high heat. Add the marinated chicken thighs skin-side down and sear for about 5-7 minutes until the skin is crispy and browned.
  5. Flip the chicken thighs over and transfer the skillet to the preheated oven. Bake for 20-25 minutes, or until the internal temperature reaches 165°F (74°C).
  6. Remove from the oven and let the chicken rest for 5 minutes before serving.
  7. Garnish with fresh pomegranate seeds and chopped parsley before serving.
