- 4 chicken thighs, bone-in and skin-on
- 1/4 cup pomegranate molasses
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (optional)
- Fresh pomegranate seeds for garnish
- Fresh parsley, chopped for garnish
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, combine pomegranate molasses, olive oil, minced garlic, salt, black pepper, cumin, smoked paprika, and cayenne pepper. Mix well.
- Add the chicken thighs to the bowl and toss to coat them evenly with the marinade. Let them marinate for at least 30 minutes, or preferably overnight in the refrigerator.
- Heat a large oven-safe skillet over medium-high heat. Add the marinated chicken thighs skin-side down and sear for about 5-7 minutes until the skin is crispy and browned.
- Flip the chicken thighs over and transfer the skillet to the preheated oven. Bake for 20-25 minutes, or until the internal temperature reaches 165°F (74°C).
- Remove from the oven and let the chicken rest for 5 minutes before serving.
- Garnish with fresh pomegranate seeds and chopped parsley before serving.
