Ingredients

  • 8 lamb chops, about 1 inch thick
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1 cup pomegranate juice
  • 1/4 cup honey
  • 1 tablespoon balsamic vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon fresh rosemary, chopped
  • 1 teaspoon fresh thyme, chopped
  • Pomegranate seeds, for garnish
  • Fresh rosemary sprigs, for garnish

Instructions

  1. Season lamb chops with salt and pepper on both sides.
  2. In a large skillet, heat olive oil over medium-high heat. Add lamb chops and sear for about 3-4 minutes on each side, or until browned and cooked to your desired doneness. Remove from skillet and set aside.
  3. In the same skillet, add pomegranate juice, honey, balsamic vinegar, garlic, rosemary, and thyme. Bring to a simmer and cook for about 5-7 minutes, or until the sauce has thickened slightly.
  4. Return the lamb chops to the skillet and coat them with the pomegranate glaze. Cook for an additional 2 minutes, turning the chops to ensure they are well coated.
  5. Serve the lamb chops garnished with pomegranate seeds and rosemary sprigs.
