- 8 lamb chops, about 1 inch thick
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 1 cup pomegranate juice
- 1/4 cup honey
- 1 tablespoon balsamic vinegar
- 2 cloves garlic, minced
- 1 teaspoon fresh rosemary, chopped
- 1 teaspoon fresh thyme, chopped
- Pomegranate seeds, for garnish
- Fresh rosemary sprigs, for garnish
Instructions
- Season lamb chops with salt and pepper on both sides.
- In a large skillet, heat olive oil over medium-high heat. Add lamb chops and sear for about 3-4 minutes on each side, or until browned and cooked to your desired doneness. Remove from skillet and set aside.
- In the same skillet, add pomegranate juice, honey, balsamic vinegar, garlic, rosemary, and thyme. Bring to a simmer and cook for about 5-7 minutes, or until the sauce has thickened slightly.
- Return the lamb chops to the skillet and coat them with the pomegranate glaze. Cook for an additional 2 minutes, turning the chops to ensure they are well coated.
- Serve the lamb chops garnished with pomegranate seeds and rosemary sprigs.
