Ingredients

  • 1 1/2 cups crushed pistachios
  • 1/2 cup unsalted butter, melted
  • 1 package (8 oz) cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup honey
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 cup phyllo dough, thawed
  • 1/4 cup additional crushed pistachios for topping

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine crushed pistachios and melted butter. Mix well.
  3. Press the pistachio mixture into the bottom of a springform pan to create the crust.
  4. In a separate bowl, beat the cream cheese and sugar together until smooth.
  5. Add sour cream, eggs, vanilla extract, honey, cinnamon, and salt. Mix until well combined.
  6. Pour the cheesecake batter over the pistachio crust in the springform pan.
  7. Bake for 50-60 minutes or until the center is set and the edges are lightly golden.
  8. Remove from the oven and let it cool to room temperature, then refrigerate for at least 4 hours or overnight.
  9. Before serving, sprinkle additional crushed pistachios on top for garnish.

Notes

  • Make sure to thaw phyllo dough in the refrigerator overnight before using.
  • For a richer flavor, consider adding more honey to the cheesecake batter.
