Ingredients

  • 1 cup unsalted pistachios, shelled
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 1 cup powdered sugar
  • 1/4 cup heavy cream
  • 1/2 teaspoon pistachio extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
  2. In a food processor, pulse the pistachios until finely ground. Set aside.
  3. In a bowl, whisk together the flour, baking powder, baking soda, salt, and ground pistachios.
  4. In a separate bowl, cream together the butter and sugar until light and fluffy.
  5. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla.
  6. Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk, starting and ending with the dry ingredients. Mix until just combined.
  7. Pour the batter into the prepared cake pan and smooth the top.
  8. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  9. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  10. For the frosting, beat together the powdered sugar, heavy cream, and pistachio extract until smooth and creamy.
  11. Once the cake is completely cool, frost the top with the pistachio frosting and garnish with chopped pistachios if desired.

Notes

  • For a richer flavor, toast the pistachios lightly before grinding.
  • This cake can also be made in advance and stored in an airtight container for up to 3 days.
