- 1 cup unsalted pistachios, shelled
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup buttermilk
- 1 cup powdered sugar
- 1/4 cup heavy cream
- 1/2 teaspoon pistachio extract
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
- In a food processor, pulse the pistachios until finely ground. Set aside.
- In a bowl, whisk together the flour, baking powder, baking soda, salt, and ground pistachios.
- In a separate bowl, cream together the butter and sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla.
- Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk, starting and ending with the dry ingredients. Mix until just combined.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- For the frosting, beat together the powdered sugar, heavy cream, and pistachio extract until smooth and creamy.
- Once the cake is completely cool, frost the top with the pistachio frosting and garnish with chopped pistachios if desired.
Notes
- For a richer flavor, toast the pistachios lightly before grinding.
- This cake can also be made in advance and stored in an airtight container for up to 3 days.
