Deliciously creamy and fragrant overnight oats infused with the rich flavors of pistachio and cardamom.
Ingredients

- 1 cup rolled oats
- 2 cups milk (dairy or non-dairy)
- 1/2 cup Greek yogurt
- 1/4 cup pistachios, chopped
- 2 tablespoons honey or maple syrup
- 1/2 teaspoon cardamom powder
- 1 teaspoon vanilla extract
- a pinch salt
Instructions
- In a large bowl, combine rolled oats, milk, Greek yogurt, honey or maple syrup, cardamom powder, vanilla extract, and salt.
- Mix well until all the ingredients are fully incorporated.
- Fold in the chopped pistachios, reserving a few for topping.
- Transfer the mixture into jars or airtight containers.
- Cover and refrigerate overnight (or at least 4 hours) to allow the oats to soak and soften.
- In the morning, stir the oats and adjust the consistency with more milk if desired.
- Top with additional chopped pistachios and a drizzle of honey or maple syrup before serving.
Notes
- You can customize the sweetness by adjusting the amount of honey or maple syrup.
- Feel free to add fruits like bananas or berries for extra flavor and nutrition.
- These overnight oats can be stored in the refrigerator for up to 4 days.
