A delicious and colorful dish combining the sweetness of pineapple with savory fried rice.
Ingredients

- 2 cups cooked jasmine rice, cooled
- 1 cup fresh pineapple, diced
- 1/2 cup frozen peas and carrots
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional)
- 1 tablespoon vegetable oil
- 2 eggs, beaten
- 2 green onions, sliced
- Salt and pepper to taste
- Chopped cilantro for garnish (optional)
Instructions
- Heat vegetable oil in a large pan or wok over medium-high heat.
- Add the beaten eggs and scramble until fully cooked. Remove from the pan and set aside.
- In the same pan, add the diced pineapple and sauté for about 2-3 minutes until slightly caramelized.
- Add the frozen peas and carrots, and cook for another 2 minutes.
- Stir in the cooked rice, soy sauce, and oyster sauce. Mix everything well and cook for about 5 minutes, allowing the rice to fry slightly.
- Add the scrambled eggs back into the pan along with the sliced green onions. Stir to combine and season with salt and pepper to taste.
- Remove from heat and garnish with chopped cilantro if desired. Serve warm.
Notes
- For a spicier version, add chopped bell peppers or jalapeños.
- You can substitute the jasmine rice with brown rice or any preferred rice variety.
