A delicious and colorful dish combining the sweetness of pineapple with savory fried rice.


Ingredients

  • 2 cups cooked jasmine rice, cooled
  • 1 cup fresh pineapple, diced
  • 1/2 cup frozen peas and carrots
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 tablespoon vegetable oil
  • 2 eggs, beaten
  • 2 green onions, sliced
  • Salt and pepper to taste
  • Chopped cilantro for garnish (optional)

Instructions

  1. Heat vegetable oil in a large pan or wok over medium-high heat.
  2. Add the beaten eggs and scramble until fully cooked. Remove from the pan and set aside.
  3. In the same pan, add the diced pineapple and sauté for about 2-3 minutes until slightly caramelized.
  4. Add the frozen peas and carrots, and cook for another 2 minutes.
  5. Stir in the cooked rice, soy sauce, and oyster sauce. Mix everything well and cook for about 5 minutes, allowing the rice to fry slightly.
  6. Add the scrambled eggs back into the pan along with the sliced green onions. Stir to combine and season with salt and pepper to taste.
  7. Remove from heat and garnish with chopped cilantro if desired. Serve warm.

Notes

  • For a spicier version, add chopped bell peppers or jalapeños.
  • You can substitute the jasmine rice with brown rice or any preferred rice variety.
