Ingredients

  • 1 cup granulated sugar, divided
  • 1 teaspoon lemon juice
  • 1 tablespoon cornstarch
  • 1 teaspoon ground cinnamon
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, melted
  • 1 cup milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the sliced peaches, 1/2 cup of sugar, lemon juice, cornstarch, and cinnamon. Toss to coat the peaches evenly, then set aside.
  3. In another bowl, mix together the flour, remaining 1/2 cup of sugar, baking powder, and salt.
  4. Stir in the melted butter, milk, and vanilla extract until just combined.
  5. Pour the batter into a greased 9×13 inch baking dish.
  6. Spoon the peach mixture over the batter without stirring.
  7. Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and the peaches are bubbly.
  8. Allow to cool slightly before serving. Enjoy warm with ice cream or whipped cream!

Notes

  • For extra flavor, you can add a pinch of nutmeg to the peach mixture.
  • This cobbler can also be made with frozen peaches; just thaw and drain them before using.
