  • 8 ounces rotini pasta
  • 1 pound ground beef or turkey
  • 1 packet taco seasoning
  • 1 cup cherry tomatoes, halved
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, canned or frozen
  • 1 cup shredded lettuce
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced red onion
  • 1/2 cup sliced black olives
  • 1 cup salsa
  • 1/2 cup sour cream
  • Tortilla chips, for serving

Instructions

  1. Cook the rotini pasta according to package instructions. Drain and set aside to cool.
  2. In a large skillet over medium heat, cook the ground beef or turkey until browned. Drain excess fat.
  3. Add the taco seasoning and follow package instructions, usually adding water and simmering for a few minutes.
  4. In a large mixing bowl, combine the cooked pasta, seasoned meat, cherry tomatoes, black beans, corn, shredded lettuce, cheddar cheese, red onion, and black olives.
  5. Toss gently to mix all the ingredients evenly.
  6. Serve the pasta taco salad on individual plates, topped with salsa, a dollop of sour cream, and a handful of crushed tortilla chips.
