- 8 ounces rotini pasta
- 1 pound ground beef or turkey
- 1 packet taco seasoning
- 1 cup cherry tomatoes, halved
- 1 cup black beans, drained and rinsed
- 1 cup corn, canned or frozen
- 1 cup shredded lettuce
- 1 cup shredded cheddar cheese
- 1/2 cup diced red onion
- 1/2 cup sliced black olives
- 1 cup salsa
- 1/2 cup sour cream
- Tortilla chips, for serving
Instructions
- Cook the rotini pasta according to package instructions. Drain and set aside to cool.
- In a large skillet over medium heat, cook the ground beef or turkey until browned. Drain excess fat.
- Add the taco seasoning and follow package instructions, usually adding water and simmering for a few minutes.
- In a large mixing bowl, combine the cooked pasta, seasoned meat, cherry tomatoes, black beans, corn, shredded lettuce, cheddar cheese, red onion, and black olives.
- Toss gently to mix all the ingredients evenly.
- Serve the pasta taco salad on individual plates, topped with salsa, a dollop of sour cream, and a handful of crushed tortilla chips.

- Feel free to customize your taco salad by adding other toppings such as avocado, jalapeños, or cilantro.
- For a vegetarian version, substitute the meat with additional beans or lentils.
