- 1 cup passion fruit pulp (fresh or canned)
- 1 cup granulated sugar
- 4 large eggs
- 1/2 cup unsalted butter, cubed
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium saucepan, combine the passion fruit pulp, sugar, and eggs. Whisk until smooth.
- Add the cubed butter, lemon juice, vanilla extract, and salt to the saucepan.
- Cook over medium heat, stirring constantly until the mixture thickens and reaches a custard-like consistency, about 10-15 minutes.
- Remove from heat and strain the mixture through a fine mesh sieve to remove any solids.
- Pour the passion fruit curd into the pre-made tart crust, smoothing the top with a spatula.
- Bake for 15 minutes or until set.
- Let the tart cool completely at room temperature before refrigerating for at least 2 hours.
