Deliciously seared scallops served over a smooth and vibrant pea puree, making for an elegant and flavorful dish that’s perfect for any occasion.
Ingredients

- 1 pound Scallops
- 2 tablespoons Olive oil
- to taste Salt
- to taste Black pepper
- 2 cups Frozen peas
- 2 tablespoons Butter
- 1/2 cup Vegetable stock
- 1 tablespoon Lemon juice
- 1 tablespoon, chopped Fresh mint
Instructions
- In a medium saucepan, bring water to a boil and add the frozen peas. Cook for 2-3 minutes until bright green and tender. Drain and set aside.
- In the same saucepan, melt the butter over medium heat. Add the cooked peas and vegetable stock. Stir to combine and let simmer for 2 minutes.
- Remove from heat and blend the pea mixture until smooth. Stir in lemon juice and season with salt and pepper to taste. Keep warm.
- Pat the scallops dry with paper towels and season both sides with salt and black pepper.
- Heat olive oil in a large skillet over medium-high heat. Once hot, add the scallops, making sure not to overcrowd the pan. Sear for 2-3 minutes on each side until golden brown and cooked through. Remove from heat.
- To serve, place a generous spoonful of pea puree on each plate. Top with seared scallops and garnish with chopped fresh mint if desired.
Notes
- Ensure the scallops are very dry before searing for the best crust.
- Do not crowd the pan while cooking the scallops, as this can cause them to steam instead of sear.
