Description

Deliciously seared scallops served over a smooth and vibrant pea puree, making for an elegant and flavorful dish that’s perfect for any occasion.


Ingredients

Scale
  • 1 pound Scallops
  • 2 tablespoons Olive oil
  • to taste Salt
  • to taste Black pepper
  • 2 cups Frozen peas
  • 2 tablespoons Butter
  • 1/2 cup Vegetable stock
  • 1 tablespoon Lemon juice
  • 1 tablespoon, chopped Fresh mint

Instructions

  1. In a medium saucepan, bring water to a boil and add the frozen peas. Cook for 2-3 minutes until bright green and tender. Drain and set aside.
  2. In the same saucepan, melt the butter over medium heat. Add the cooked peas and vegetable stock. Stir to combine and let simmer for 2 minutes.
  3. Remove from heat and blend the pea mixture until smooth. Stir in lemon juice and season with salt and pepper to taste. Keep warm.
  4. Pat the scallops dry with paper towels and season both sides with salt and black pepper.
  5. Heat olive oil in a large skillet over medium-high heat. Once hot, add the scallops, making sure not to overcrowd the pan. Sear for 2-3 minutes on each side until golden brown and cooked through. Remove from heat.
  6. To serve, place a generous spoonful of pea puree on each plate. Top with seared scallops and garnish with chopped fresh mint if desired.

Notes

  • Ensure the scallops are very dry before searing for the best crust.
  • Do not crowd the pan while cooking the scallops, as this can cause them to steam instead of sear.
