- Zest of 2 oranges

Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cardamom.
- In a large mixing bowl, combine the sugar and eggs. Whisk until the mixture is pale and fluffy.
- Gradually add the olive oil while continuing to whisk until fully incorporated.
- Stir in the orange juice, orange zest, and vanilla extract until combined.
- Slowly add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
- For added flavor, consider glazing the cake with an orange glaze after it cools.
