Ingredients

  • 1 cup heavy cream
  • 1 cup vegetable broth
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Fresh basil, for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the sun-dried tomatoes and sauté for 2-3 minutes.
  3. Stir in the vegetable broth and bring to a simmer.
  4. Add the gnocchi and cook according to package instructions, about 3-5 minutes.
  5. Stir in the heavy cream, garlic powder, and spinach.
