- 1 pound gnocchi
- 1 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 1 cup heavy cream
- 1 cup vegetable broth
- 1 teaspoon garlic powder
- Salt and pepper, to taste
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- Fresh basil, for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the sun-dried tomatoes and sauté for 2-3 minutes.
- Stir in the vegetable broth and bring to a simmer.
- Add the gnocchi and cook according to package instructions, about 3-5 minutes.
- Stir in the heavy cream, garlic powder, and spinach.
- Cook until the spinach wilts and the sauce thickens, about 2-3 minutes.
- Season with salt and pepper to taste.
- Remove from heat and stir in the Parmesan cheese.
- Serve hot, garnished with fresh basil.
