A delicious and hearty one-skillet shakshuka featuring spicy chorizo, eggs, and a flavorful tomato sauce, perfect for brunch or dinner.

- 1 tablespoon olive oil
- 1 medium onion, diced
- 1 red bell pepper, diced
- 2 cloves garlic, minced
- 200g chorizo, sliced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 can (400g) crushed tomatoes
- Salt and pepper, to taste
- 4 large eggs
- Fresh parsley, for garnish
- Feta cheese, for topping (optional)
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and red bell pepper, and sauté until softened, about 5 minutes.
- Add the minced garlic and sliced chorizo to the skillet. Cook for another 5 minutes until the chorizo is browned and the garlic is fragrant.
- Stir in the ground cumin and smoked paprika, cooking for 1 minute until the spices are fragrant.
- Pour in the crushed tomatoes, and season with salt and pepper. Stir to combine and bring the mixture to a simmer. Cook for about 10 minutes until the sauce thickens slightly.
- Make four small wells in the sauce and crack an egg into each well. Cover the skillet with a lid and cook for about 5-7 minutes, or until the eggs are set to your liking.
- Remove the skillet from heat and sprinkle with fresh parsley and feta cheese, if using. Serve immediately with crusty bread.
Notes
- Feel free to add other vegetables like spinach or zucchini for extra nutrition.
- Adjust the level of spiciness by using mild or hot chorizo.
- This dish is best enjoyed fresh but can be stored in the refrigerator for up to 2 days.
