A delicious and hearty one-skillet shakshuka featuring spicy chorizo, eggs, and a flavorful tomato sauce, perfect for brunch or dinner.


Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 200g chorizo, sliced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 can (400g) crushed tomatoes
  • Salt and pepper, to taste
  • 4 large eggs
  • Fresh parsley, for garnish
  • Feta cheese, for topping (optional)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and red bell pepper, and sauté until softened, about 5 minutes.
  2. Add the minced garlic and sliced chorizo to the skillet. Cook for another 5 minutes until the chorizo is browned and the garlic is fragrant.
  3. Stir in the ground cumin and smoked paprika, cooking for 1 minute until the spices are fragrant.
  4. Pour in the crushed tomatoes, and season with salt and pepper. Stir to combine and bring the mixture to a simmer. Cook for about 10 minutes until the sauce thickens slightly.
  5. Make four small wells in the sauce and crack an egg into each well. Cover the skillet with a lid and cook for about 5-7 minutes, or until the eggs are set to your liking.
  6. Remove the skillet from heat and sprinkle with fresh parsley and feta cheese, if using. Serve immediately with crusty bread.

Notes

  • Feel free to add other vegetables like spinach or zucchini for extra nutrition.
  • Adjust the level of spiciness by using mild or hot chorizo.
  • This dish is best enjoyed fresh but can be stored in the refrigerator for up to 2 days.
