- 1 can (14.5 oz) diced tomatoes
- 4 cups vegetable broth
- 1 teaspoon Italian seasoning
- 1 bag (9 oz) fresh tortellini
- 2 cups fresh spinach
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion, garlic, carrot, and celery. Sauté until the vegetables are tender, about 5 minutes.
- Stir in the diced tomatoes, vegetable broth, and Italian seasoning. Bring to a boil.
- Add the tortellini and cook according to package instructions, usually about 3-5 minutes.
- Stir in the fresh spinach until wilted. Season with salt and pepper to taste.
- Serve hot, topped with grated Parmesan cheese.
