- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 cup chicken broth
- 1 package (9 oz) cheese tortellini
- 1 cup heavy cream
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup spinach, fresh
- 1/2 cup grated Parmesan cheese
- Fresh basil for garnish
Instructions
- In a large pot, heat olive oil over medium heat.
- Add diced onion and sauté until translucent, about 3-4 minutes. Stir in garlic and cook for another minute.
- Add the diced tomatoes (with juice), chicken broth, and Italian seasoning. Bring to a simmer.
- Stir in the cheese tortellini and cook according to package instructions, usually about 3-5 minutes.
- Once the tortellini is cooked, reduce heat to low and stir in the heavy cream, spinach, and Parmesan cheese.
- Season with salt and pepper to taste. Cook until the spinach is wilted.
- Serve hot, garnished with fresh basil.
