- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- Salt and pepper, to taste
- 1 onion, diced
- 3 cloves garlic, minced
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- 1 cup frozen peas
- 1/2 cup grated Parmesan cheese
- Fresh parsley, chopped, for garnish
Instructions
- In a large pot or Dutch oven, heat olive oil over medium heat. Season chicken pieces with salt and pepper, then add to the pot. Cook until browned and cooked through, about 5-7 minutes. Remove chicken from pot and set aside.
- In the same pot, add diced onion and cook until softened, about 3-4 minutes. Add garlic and cook for an additional 1 minute until fragrant.
- Stir in the rice, chicken broth, heavy cream, thyme, and paprika. Bring the mixture to a boil.
- Reduce heat to low, cover, and simmer for 15 minutes, or until the rice is tender and the liquid is absorbed.
- Stir in the cooked chicken, frozen peas, and Parmesan cheese. Cook for another 2-3 minutes until heated through.
- Remove from heat and garnish with fresh parsley before serving.
Notes
- For added flavor, marinate the chicken in herbs and spices before cooking.
- You can substitute the heavy cream with half-and-half for a lighter version.
