Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • Salt and pepper, to taste
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 cup frozen peas
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped, for garnish

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium heat. Season chicken pieces with salt and pepper, then add to the pot. Cook until browned and cooked through, about 5-7 minutes. Remove chicken from pot and set aside.
  2. In the same pot, add diced onion and cook until softened, about 3-4 minutes. Add garlic and cook for an additional 1 minute until fragrant.
  3. Stir in the rice, chicken broth, heavy cream, thyme, and paprika. Bring the mixture to a boil.
  4. Reduce heat to low, cover, and simmer for 15 minutes, or until the rice is tender and the liquid is absorbed.
  5. Stir in the cooked chicken, frozen peas, and Parmesan cheese. Cook for another 2-3 minutes until heated through.
  6. Remove from heat and garnish with fresh parsley before serving.

Notes

  • For added flavor, marinate the chicken in herbs and spices before cooking.
  • You can substitute the heavy cream with half-and-half for a lighter version.
