  • 2 cloves garlic, minced
  • 1 cup orzo pasta
  • 3 cups vegetable broth
  • 2 cups fresh spinach, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup feta cheese, crumbled
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and cook for an additional minute until fragrant.
  3. Stir in the orzo pasta and cook for 1-2 minutes, allowing it to lightly toast.
  4. Pour in the vegetable broth and bring to a boil. Reduce heat to a simmer, cover, and cook for about 10 minutes until the orzo is tender and most of the liquid is absorbed.
  5. Add the chopped spinach and halved cherry tomatoes. Stir until the spinach wilts.
  6. Remove from heat and stir in the crumbled feta cheese. Season with salt and pepper to taste.
  7. Garnish with fresh parsley and serve warm.
