Ingredients

  • 4 chicken thighs, boneless and skinless
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon paprika
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup spinach, fresh
  • Parsley, for garnish

Instructions

  1. Season the chicken thighs with salt and pepper.
  2. In a large skillet, heat olive oil over medium heat. Add the chicken thighs and cook until golden brown on both sides, about 5-7 minutes per side. Remove and set aside.
  3. In the same skillet, add the chopped onion and sauté until translucent, about 3-4 minutes.
  4. Add garlic and paprika, and cook for another minute until fragrant.
  5. Pour in the chicken broth and bring to a simmer.
  6. Stir in the heavy cream and bring to a gentle boil. Reduce heat to low.
  7. Add the chicken thighs back into the skillet, cover, and let simmer for 10-15 minutes, or until the chicken is cooked through.
  8. Stir in the fresh spinach until wilted.
  9. Serve hot, garnished with parsley.

Notes

  • Feel free to substitute chicken breasts for thighs if you prefer.
  • You can add other vegetables like bell peppers or mushrooms for extra flavor and nutrition.
