- 4 chicken thighs, boneless and skinless
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon paprika
- 1 cup chicken broth
- 1 cup heavy cream
- 1 cup spinach, fresh
- Parsley, for garnish
Instructions
- Season the chicken thighs with salt and pepper.
- In a large skillet, heat olive oil over medium heat. Add the chicken thighs and cook until golden brown on both sides, about 5-7 minutes per side. Remove and set aside.
- In the same skillet, add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add garlic and paprika, and cook for another minute until fragrant.
- Pour in the chicken broth and bring to a simmer.
- Stir in the heavy cream and bring to a gentle boil. Reduce heat to low.
- Add the chicken thighs back into the skillet, cover, and let simmer for 10-15 minutes, or until the chicken is cooked through.
- Stir in the fresh spinach until wilted.
- Serve hot, garnished with parsley.
Notes
- Feel free to substitute chicken breasts for thighs if you prefer.
- You can add other vegetables like bell peppers or mushrooms for extra flavor and nutrition.
