- 250g Biscoff cookies, crushed
- 100g unsalted butter, melted
- 500g cream cheese, softened
- 100g powdered sugar
- 200ml heavy cream
- 200g Biscoff spread
- 1 teaspoon vanilla extract
- Pinch of salt
- Extra Biscoff cookies for topping
Instructions
- In a bowl, combine the crushed Biscoff cookies and melted butter. Mix until well combined.
- Press the mixture into the bottom of a 9-inch springform pan to form the crust. Refrigerate while preparing the filling.
- In a large mixing bowl, beat the cream cheese and powdered sugar until smooth.
- Add the heavy cream, Biscoff spread, vanilla extract, and salt to the bowl. Beat on medium speed until the mixture is thick and fluffy.
- Pour the cheesecake filling over the crust in the springform pan and smooth the top with a spatula.
- Refrigerate the cheesecake for at least 4 hours, or until set.
- Once set, remove the cheesecake from the springform pan. Top with extra Biscoff cookies before serving.
