- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 4 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 cup sour cream
- 1/4 cup all-purpose flour
Instructions
- Preheat your oven to 325°F (163°C).
- In a medium bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Mix well.
- Press the mixture into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
- In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add 1 cup sugar and beat until well combined.
- Add the vanilla extract and mix until incorporated.
- Add the eggs, one at a time, mixing well after each addition.
- Add sour cream and flour, then mix until just combined. Do not overmix.
- Pour the cheesecake batter over the cooled crust in the springform pan.
- Bake for 55-60 minutes, or until the center is set but still slightly jiggly.
- Turn off the oven, crack the oven door, and let the cheesecake cool in the oven for 1 hour.
- Remove from the oven and refrigerate for at least 4 hours, preferably overnight, before serving.
Notes
- For best results, use room temperature ingredients.
- To prevent cracks, avoid overmixing the batter and bake at a low temperature.
