Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 4 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream
  • 1/4 cup all-purpose flour

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a medium bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Mix well.
  3. Press the mixture into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
  4. In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add 1 cup sugar and beat until well combined.
  5. Add the vanilla extract and mix until incorporated.
  6. Add the eggs, one at a time, mixing well after each addition.
  7. Add sour cream and flour, then mix until just combined. Do not overmix.
  8. Pour the cheesecake batter over the cooled crust in the springform pan.
  9. Bake for 55-60 minutes, or until the center is set but still slightly jiggly.
  10. Turn off the oven, crack the oven door, and let the cheesecake cool in the oven for 1 hour.
  11. Remove from the oven and refrigerate for at least 4 hours, preferably overnight, before serving.

Notes

  • For best results, use room temperature ingredients.
  • To prevent cracks, avoid overmixing the batter and bake at a low temperature.
