  • 1 lemon, halved
  • 4 medium potatoes, peeled and quartered

  • 1/2 cup milk
  • 4 tablespoons butter

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a small bowl, mix together olive oil, salt, pepper, garlic powder, thyme, and rosemary.
  3. Pat the chicken dry with paper towels and rub the herb mixture all over the chicken, including under the skin.
  4. Place the lemon halves inside the cavity of the chicken.
  5. In a large roasting pan, arrange the quartered potatoes and seasonal vegetables around the chicken.
  6. Roast in the preheated oven for 1 hour and 15 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the juices run clear.
  7. While the chicken is roasting, boil the potatoes in salted water until tender, about 15 minutes. Drain and mash with milk and butter until creamy.
  8. Once the chicken is cooked, let it rest for 10-15 minutes before carving. Serve with the mashed potatoes and roasted vegetables on the side.
