Ingredients

  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 cups spinach
  • 1 loaf of bread
  • 1/2 cup butter
  • 1 cup fresh fruit (berries, melon)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together eggs and milk.
  3. Add cheese, bell pepper, onion, and spinach to the egg mixture.
  4. Grease a baking dish with butter.
  5. Pour the egg mixture into the baking dish.
  6. Cut the bread into cubes and place on top of the egg mixture.
  7. Dot with remaining butter.
  8. Bake for 30-35 minutes until set.
  9. Serve with fresh fruit on the side.
