Ingredients

- 6 eggs
- 1 cup milk
- 1 cup shredded cheese
- 1 bell pepper, diced
- 1 onion, diced
- 2 cups spinach
- 1 loaf of bread
- 1/2 cup butter
- 1 cup fresh fruit (berries, melon)
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, whisk together eggs and milk.
- Add cheese, bell pepper, onion, and spinach to the egg mixture.
- Grease a baking dish with butter.
- Pour the egg mixture into the baking dish.
- Cut the bread into cubes and place on top of the egg mixture.
- Dot with remaining butter.
- Bake for 30-35 minutes until set.
- Serve with fresh fruit on the side.

- Feel free to add your favorite vegetables.
- Can be made ahead and reheated.
