- 6 large eggs
- 3 tablespoons mayonnaise
- 1 teaspoon mustard
- Salt to taste
- Paprika to taste
- Food coloring
- Olives or cherry tomatoes for garnish
Instructions
- Boil the eggs in a pot of water for about 10 minutes.
- Place the boiled eggs in an ice bath to cool them down quickly.
- Peel the cooled eggs carefully.
- Cut the eggs in half lengthwise and remove the yolks.
- In a bowl, mash the yolks and mix with mayonnaise, mustard, salt, and paprika.
- Add a few drops of food coloring to the yolk mixture to create the ‘eyeball’ effect.
- Spoon or pipe the yolk mixture back into the egg whites.
- Garnish each egg with an olive or cherry tomato to represent the ‘pupil’.
