Description
A rich and decadent chocolate cake topped with marshmallows, nuts, and a gooey chocolate frosting, reminiscent of the classic Mississippi Mud Pie.

- 1 cup (225g) unsalted butter, softened
- 2 cups (400g) granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 3/4 cups (220g) all-purpose flour
- 3/4 cup (65g) unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup (240ml) buttermilk
- 2 cups (200g) mini marshmallows
- 1 cup (120g) chopped nuts (walnuts or pecans)
- 1 cup (175g) semisweet chocolate chips
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking dish.
- In a large bowl, cream together the softened butter and sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- In another bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk. Mix until just combined.
- Pour the batter into the prepared baking dish and spread evenly. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Remove the cake from the oven and sprinkle the mini marshmallows and nuts evenly on top. Return to the oven for an additional 5 minutes to melt the marshmallows.
- While the marshmallows are melting, prepare the chocolate frosting by melting the chocolate chips in a microwave-safe bowl or over a double boiler. Stir until smooth and let cool slightly.
- Spread the melted chocolate over the warm cake, covering the marshmallows. Allow to cool before slicing and serving.
Notes
- For an extra touch, you can drizzle some chocolate syrup on top before serving.
- Feel free to substitute the nuts with your favorite type or omit them entirely for a nut-free version.
