Ingredients

  • 1 cup (225g) unsalted butter, softened
  • 2 cups (400g) granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 3/4 cups (220g) all-purpose flour
  • 3/4 cup (65g) unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (240ml) buttermilk
  • 2 cups (200g) mini marshmallows
  • 1 cup (120g) chopped nuts (walnuts or pecans)
  • 1 cup (175g) semisweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking dish.
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. In another bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk. Mix until just combined.
  6. Pour the batter into the prepared baking dish and spread evenly. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  7. Remove the cake from the oven and sprinkle the mini marshmallows and nuts evenly on top. Return to the oven for an additional 5 minutes to melt the marshmallows.
  8. While the marshmallows are melting, prepare the chocolate frosting by melting the chocolate chips in a microwave-safe bowl or over a double boiler. Stir until smooth and let cool slightly.
  9. Spread the melted chocolate over the warm cake, covering the marshmallows. Allow to cool before slicing and serving.

Notes

  • For an extra touch, you can drizzle some chocolate syrup on top before serving.
  • Feel free to substitute the nuts with your favorite type or omit them entirely for a nut-free version.
