These Miso Butter Roasted Carrots are a delicious and savory side dish that combines the sweetness of roasted carrots with the umami flavor of miso and the richness of butter.

- 1 pound carrots, peeled and cut into sticks
- 2 tablespoons unsalted butter, melted
- 2 tablespoons white miso paste
- 1 tablespoon honey or maple syrup
- 1 tablespoon olive oil
- Salt and pepper to taste
- Chopped fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, whisk together the melted butter, miso paste, honey or maple syrup, olive oil, salt, and pepper until smooth.
- Add the carrot sticks to the bowl and toss until they are evenly coated with the miso butter mixture.
- Spread the carrots out in a single layer on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 20-25 minutes, or until the carrots are tender and caramelized, stirring halfway through for even cooking.
- Remove from the oven and garnish with chopped fresh parsley if desired. Serve warm.
Notes
- Feel free to adjust the amount of honey or maple syrup based on your desired level of sweetness.
- You can use baby carrots instead of regular carrots for a quicker prep time.
